“What is a Commissary Kitchen?” To those of us who use them…it can be one of the most important locations around as they are very sparse in Nevada. It is a shared kitchen. It allows Chefs and small business to reach their business potentials without the outlying of all the cash of a Brick and Mortar space. So Small Business Come Talk to Us. Inside the Commissary we house: A couple full time chefs: Annie – Valley Larder LLC and Lily – Faded Apron Custom Catering, El Fogon Food Truck – along with the most beautiful Chocolates and Candies around being made weekly by our Chocolatier – Gary & Sandy – Knights Candy Shop – We have Ellie – Sweetheart Churro Company make her rounds throughout the valley. Roland & Shelby Pure Valley Juice Bar is making amazing juice bottles to keep everyone healthy. You can find several of our team at Esmeralda Farmers Market in Minden on Tuesday Nights and Asian Street also at Carson City Farmers Market on Saturdays. PRICING / DETAILS
Pricing when/where we have openings is as follows: Full Time Permanent is $900 a month (no space available) Full Time not permanent space is $600 a month / Part Time is $300 a months and if you’re a Food Truck that needs a home base, but does not need Cold Storage and very limited Dry Storage, reach out as we can probably accommodate you at $250 a month. Rent is always due on 1st of month. If there is an opening bring your Depot form and 1st months rent with Business License, Insurance, Safe Serve Certificate and we’ll hold your spot. No spaces are held without Health Inspection/Depot Information/Insurance and 1st months payment. 2nd months is prorated to date you started in 1st month,

Part Time – 10 spaces Total $300 a month
Food Truck Only – $250 a month One day a week disposal.
Hourly is $25 an hour, MUST BE LICENSED IN DOUGLAS COUNTY READY TO WALK IN DOOR AND COOK. No start-ups allowed.
No overnight parking
It all depends on what you’re cooking? We are 100% Induction and Convection cooking – “NO FRYERS, NO GRILLS, NO BBQ” we also have very limited access to 220 power, so if your business has specialty equipment that requires 220, we might not be able to accomodate you. Everyone pays rent on the first for the month with second month prorated. It is always Month-to-Month contract with a required 30 day notice. We do not offer hourly rates at the moment. However, our fees include use of kitchen, the appliances/equipment, utilities, Wifi and Alarm. We have parking out front and a ramp. The building’s owner is wonderful and we keep our kitchen, clean, fitted and up to date with all local business codes. If you’d like to join a wonderful group of cooks and comradery, please reach out and join our wait list.
No space for overnight parking of Food Trucks sorry (however, there are times during the day if you need to move your Food Truck/ Food Trailer / Concession Trailer for loading event or cool down, we can generally accommodate you as we know it is needed.

NOTE: WHY LARDER? WHAT DOES IT MEAN? roughly it means Cupboard “a place to store food” Americans use the word Pantry these days, but most in certain areas of the world still use Larder.
The word comes from the latin word lardarium. It was how food (especially meat) was stored long ago before we had refrigeration. We use it…mostly just to be different and we like the word. Since we began years ago here in the Valley as a Cheese & Charcuterie company only. I kind of felt like Charcuterie (means cured meat or a store selling cold cooked meats) it was appropriate for what we were making. Explanation
Charcuterie is a French term that refers to a way of preserving meat by curing it. This method was developed before refrigeration. Charcuterie boards often include cured meats, cheeses, fruits, vegetables, and breads.
The term “charcuterie” can also refer to a delicatessen that specializes in selling cured meats and meat dishes. The people who make charcuterie are called charcutiers.
History
The practice of charcuterie dates back to the 15th century in France. At that time, charcutiers were organized and ran shops that were permitted to make, cook, and sell pork products. Today, charcuterie is made from a variety of meats, including pork, game, and poultry.
